Vietnamese coffee filter set

Preparing delicious Vietnamese coffee is quick, easy and doesn't require much clean-up afterward. The coffee filter is stainless steel and there are three parts (filter, screw-on damper, and lid). Simply place the filter on top of a cup, so it looks like a hat. Add 2-3 teaspoons of coffee to the filter, then screw on the damper so it's snug (not tight). Shake the filter a bit to settle the coffee. Fill up the cup about 1/3 with hot water then wait 20 seconds. Unscrew the damper 2 turns and fill the cup entirely with hot water. Place the lid on and wait a few minutes until the water has dripped though. Add a spoonful (or more) of sweetened condensed milk to the cup before or after you start the process. The final result is fabulous. Printed instructions come with the filter. The filter set is made in Taiwan of stainless steel, and quality is excellent--it will last for years. Help please with a traditional Italian pasta sauce for lasagne made from scratch.?
I am making Lasagne for the inlaws this weekend and I'm out to try and impress any suggestions that you use or have tried for the sauce?
Well, for sure, you'll have to use tomato paste and then keep adding water to the right consistency. Maybe that isn't your idea of 'from scratch', but it sure tastes better than anything you'd match by boiling down your own tomatoes, Also you don't have to salt anything after using it. They made paste in a factory just for you at a price you'll never match, so use it. Saves time, too.
I do this all the time, and each time it tastes better, or at least differently. You'll need at least a couple of chopped onions, too. Better still, puree some onions in a food processor or blender, making some chunks small and some chunks tiny. Chop garlic too, and chop a couple red peppers into that.
Then make your" red" sauce in one pan, (and have someone stirring it, you adding garlic first in some olive oil, adding , chopped tomatoes, tomato paste, eggplant, mushrooms, later Basil etc. , whatever you have really.
At the same time in another pan, make your "Yellow" sauce" brown your onions (not brown, but 'Yellow' your onions), in plenty of oil.
Indians from India have that very same technique when they make Curry, (something I can't do, by the way, because Curry is too complicated ), but I think they must have shown something like that to the Italians, (or Romans), because it is the whole idea behind sauce: one pan flavored with onion, the other pan flavored with garlic, (and no onion).
Whatever you add to either pan is gonna be either onion or garlic flavored, giving you at least two varieties of taste, (and different textures adding things at different times, too.) Divide your mushrooms, add some mushrooms or eggplant earlier or later and you'll have things done differently in different flavors in the same sauce, some mushrooms fresher, some more done.
Makes for variety of taste, too, in the chunks you eat, too, whatever you might hope for.. And, this is supposed to be fun so just try to make a game of it.
Then, just before you think you are done, combine both pans, stir, cover, and simmer for maybe 15-20 more minutes, adding more water if need be. (Tomato paste expands) You can add still more mushrooms and Basil, at this time, to give them a third flavor (of the new combined flavor).
It ALWAYS comes out right, the only thing now is to improve on it. By experimenting and trying new things.
And you know what? I never mentioned meat, that is actually a veggie recipe.
But you can add meat (earliest) ,to either sauce, as well, treat it almost as you would the eggplant or Mushrooms.
Sprinkle some black pepper to taste and also [plenty of Marjoram and Oregano and Basil], within reason. Have Parmesan cheese on hand. Repeat: don't add more salt.
